Preparation of lamb skewers on the BBQ

For the preparation of the lamb skewers we choose the Barbecook Siesta 412. Thanks to the practical one hand control buttons you can start grilling within 10 minutes. The grids of the Siesta are made of enamelled cast iron, an extremely high-quality material and ideal for searing the lamb skewers in a good and even manner. Extra handy on the Siesta is the warming rack inside the gas barbecue. On this rack, you can put the lamb skewers that are already ready, while the they still remain warm.

Put the minced lamb in a bowl and mix in the egg and breadcrumbs. Put all the spices in a mortar and pound into a fine mass. Finely chop 2 cloves of garlic and peel and grate the ginger. Mix the spices, garlic and ginger into the minced meat mixture. Make sure the minced lamb absorbs the spices well.

Roll the minced lamb into sausages and press them flat. Stick the flat minced lamb sausages on the Barbecook’s bamboo skewers and rub them with olive oil. Place the lamb skewers on the preheated gas barbecue. Turn the lamb skewers regularly. The cooking time depends on the thickness of the lamb skewers. You can use one of the many Barbecook grill tongs to turn the lamb skewers.

Chop the remaining garlic clove finely for the dipping sauce. Wash the lime and grate the zest. Add the zest of the lime and chopped garlic to the yoghurt and add some lime juice. Chop a few sprigs of mint and grate the radish. Complete the dip by adding the mint and grated radish to the yoghurt mixture. Season to taste with salt and pepper. Finally, add a spoonful of mayonnaise.

Remove the lamb skewers from the barbecue and serve with the fresh dipping sauce. Finish off with some extra lime zest, fresh mint and sesame seeds.
